Chakchouka

Chakchouka

A popular breakfast or light meal in Algeria, chakchouka is made with eggs poached in a rich tomato and bell pepper sauce.

Ingredients:

  • 2–3 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1–2 bell peppers, diced
  • 3–4 tomatoes, chopped
  • 1 tsp paprika
  • ½ tsp cumin
  • Salt to taste
  • 2–4 eggs
  • Fresh parsley for garnish

Steps:

  • Heat olive oil in a skillet over medium heat.
  • Sauté onions and garlic until soft.
  • Add bell peppers and cook until tender.
  • Stir in tomatoes, paprika, cumin, and salt; simmer 10–15 minutes.
  • Make small wells in the sauce and crack eggs into each well.
  • Cover and cook until eggs are set.
  • Drizzle extra olive oil and sprinkle parsley before serving.
  • Serve with crusty bread.
