Chakchouka
A popular breakfast or light meal in Algeria, chakchouka is made with eggs poached in a rich tomato and bell pepper sauce.
Ingredients:
- 2–3 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1–2 bell peppers, diced
- 3–4 tomatoes, chopped
- 1 tsp paprika
- ½ tsp cumin
- Salt to taste
- 2–4 eggs
- Fresh parsley for garnish
Steps:
- Heat olive oil in a skillet over medium heat.
- Sauté onions and garlic until soft.
- Add bell peppers and cook until tender.
- Stir in tomatoes, paprika, cumin, and salt; simmer 10–15 minutes.
- Make small wells in the sauce and crack eggs into each well.
- Cover and cook until eggs are set.
- Drizzle extra olive oil and sprinkle parsley before serving.
- Serve with crusty bread.
