Algerian couscous
Couscous is a classic Algerian staple, often served with a medley of vegetables like carrots, zucchini, and chickpeas.
Ingredients:
- 1 cup couscous
- 2–3 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1–2 carrots, diced
- 1 zucchini, diced
- ½ cup chickpeas (cooked)
- Salt, pepper, and ½ tsp cumin
Steps:
- Steam couscous according to package instructions.
- Fluff with a fork and drizzle lightly with olive oil.
- Heat olive oil in a pan and sauté onions and garlic.
- Add carrots, zucchini, and chickpeas; season with salt, pepper, and cumin.
- Mix the cooked vegetables into the couscous.
- Drizzle with more olive oil if desired and serve warm.
