Algerian couscous

Couscous is a classic Algerian staple, often served with a medley of vegetables like carrots, zucchini, and chickpeas.

Ingredients:

  • 1 cup couscous
  • 2–3 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1–2 carrots, diced
  • 1 zucchini, diced
  • ½ cup chickpeas (cooked)
  • Salt, pepper, and ½ tsp cumin

Steps:

  • Steam couscous according to package instructions.
  • Fluff with a fork and drizzle lightly with olive oil.
  • Heat olive oil in a pan and sauté onions and garlic.
  • Add carrots, zucchini, and chickpeas; season with salt, pepper, and cumin.
  • Mix the cooked vegetables into the couscous.
  • Drizzle with more olive oil if desired and serve warm.
